Our home sourced beef is farmed by the
family at Russell Lawson's Midseat Farm in West Lothian. This
means we get it direct from the farm and the quality is
assured.
John Lawson says " We sell
only quality meat products, prepared to the highest standards. Our
beef is hung from between 21 days and one month, and all the meat
is sold at its peak of freshness. Of course we offer freezer packs
too, but we freeze the meat at the right time, and ensure when you
take it home to your freezer, it will be at its best when you
decide to use it in your favourite recipes"

Game
Venison is very nutritious, rich in
protein and low in cholesterol and saturated fats. Because it is
wild it is not filled with growth hormones or preservatives. There
is very little waste and it is surprisingly quick to cook
Shoulder, haunch and leg are most suitable cuts for braising.
John Lawson says " People
don't by it because think venison is harder to cook, but its not.
It's just the same as beef, only leaner. They think it has a
stronger taste than other meats and its richer but it's not that
strong. You should give it a try, and we will help guide you hoe
to cook it"
